The Chef Dany Willard Suggests : La Maudite Fish & Chips

La Maudite Fish & Chips

454g of Tomcod filets
200 ml vegetable oil
1/2 cup flour
1 teaspoon of baking powder
Salt and pepper, Espelette pepper
150 ml of la Maudite beer (very cold)

Mix the flour, baking powder, salt, pepper and the Espelette pepper in a big bowl.

Add the la Maudite beer and lightly beat it, let rest for 15 minutes.

Submerge the filets in the batter and drop them in the hot oil.

Serve with fries and spicy mayonnaise.

Spicy Mayonnaise 

1 egg yolk
1 cup of vegetable oil
2 teaspoons of Dijon mustard
Juice from half a lemon
Salt and pepper
Sri Racha (hot pepper paste)

Whisk the egg and the Dijon mustard.

Drizzle in the olive oil while whisking continuously.

Once the mayonnaise looks about right, add the lemon juice, salt, pepper and the Sri Racha to taste.

Keep refrigerated.
