
Tomcod Nuggets
- 454g of cooked Tomcod
- 1 big Yukon Gold potato, cooked and chilled
- 1 minced green onion
- 1 minced gray shallot
- Half a red bell pepper, diced
- 1 minced garlic clove
- Salt and pepper
- Sri Racha
- 1 egg
Mash the Tomcod, the potato and the egg in a bowl with a fork.
Add the onion, garlic, gray shallot and the red bell pepper, mix.
Salt and pepper to taste and add a little Sri Racha.
Form into small nuggets, set aside.
Breading for the Tomcod nuggets
- 2 eggs
- 100 g of flour
- Japanese style breading (panko)
- Sesame seeds
Roll the nugget in the flour.
Dip the nuggets in the beaten eggs.
Cover them with the breading and sesame seeds.
Fry in a fryer.
