Tomcod Nuggets (by Dany Willard)

Petit poisson des chenaux

Tomcod Nuggets

  • 454g of cooked Tomcod
  • 1 big Yukon Gold potato, cooked and chilled
  • 1 minced green onion
  • 1 minced gray shallot
  • Half a red bell pepper, diced
  • 1 minced garlic clove
  • Salt and pepper
  • Sri Racha
  • 1 egg

Mash the Tomcod, the potato and the egg in a bowl with a fork.

Add the onion, garlic, gray shallot and the red bell pepper, mix.

Salt and pepper to taste and add a little Sri Racha.

Form into small nuggets, set aside.

 

Breading for the Tomcod nuggets 

  • 2 eggs
  • 100 g of flour
  • Japanese style breading (panko)
  • Sesame seeds

Roll the nugget in the flour.

Dip the nuggets in the beaten eggs.

Cover them with the breading and sesame seeds.

Fry in a fryer.
